Berry Cherry Spinach Salad | In My Home

Ten days ago, my husband and I decided it was time for a change. Not that we really ate unhealthy before, because well let’s be honest…we’re both a little nutty when it comes to health. I avoid gluten and dairy completely, and when we got married, I just naturally kept cooking that way. But on August 1st, we decided it was time to just cleanse our hearts, souls, minds, and our bodies. It’s been a little over a week and I cannot even BEGIN to tell you how clear headed I feel, how much healthier my body already feels and how obvious and apparent the changes already are.

A lot of you are probably wondering how in the world we’re doing this and what program we’re using. It’s really been incredibly simple, but I also love to cook, so it’s been like an adventure for me ;) We’re shopping 90% organic and using Standard Process and their 21-day Purification Program.

Essentially, it’s a diet consisting of almost all vegetables, fruits, quinoa, red lentils, unsweetened coconut milk and assorted spices, oils and vinegars. That’s right, no meat OR eggs. That just about killed us because protein is so important! But after the initial 11-day cleanse, you can re-introduce grass fed lean meats and fish. So we’re halfway there! ;)

This journey has been a life changer for me. I’ll give you the whole story, but I really just needed Nathan to be my cheerleader in starting to nourish my body appropriately in order to be healthy! Cooking may be a huge strength and something I love, but it’s also been a weakness…in that stress and lies I believe came together into making me think I couldn’t eat well and that’s not true! Cleansing and getting rid of the “yuck” in order to be fully healthy has changed me. Ahh. But on this summer day, I thought I would share a quick 5-minute lunch/dinner recipe that has been an easy go-to on this cleanse! Top with some grilled chicken or steak and you’ll have a yummy dinner too!

Berry Cherry Spinach Salad | Serves 2

4 cups spring mix or spinach

1 cup cherry tomatoes, sliced in half

1 cup raspberries, washed

1 cup strawberries, sliced

1 cup mushrooms, sliced & quickly sauteed in olive oil

2 Tbsp pumpkin seeds

1 Tbsp sesame seeds

1 shallot

2 chicken breasts, grilled (optional)

Place 2 cups of greens in each bowl and evenly disperse remaining ingredients!

For dressing:

2 Tbsp grapeseed oil, cold pressed

3 Tbsp balsamic vinegar, aged

1 tsp Himalayan pink salt

1/2 tsp fresh ground black pepper

3/4 tsp herbs de provence

Whisk together and pour over salads!
